This super simple but elegant recipe calls for dried Ambrosia apples, fresh thyme and garlic, spicy Dijon mustard, breadcrumbs and a fresh cut of pork loin. Chef Michael walks us through each step, from preparing your pork loin, to creating the crust to the two step cooking technique. He suggests serving this delicious dish with local veggies (like carrots, beets, garlic mashed potatoes and of course, homemade Ambrosia apple sauce.
